On An Inhale
 
Sometimes taking a few hours on a Sunday or in this case, Monday, can really help keep me on track to eat healthy for the week. Having foods that are ready to go and that I can easily grab before/after and during work are vital for me to be successful. My schedule has become so closely planned out that food HAS to be easy because there is just no extra time. 

Depending on the day...
Before work I teach, blog/homework, go to the gym/do yoga
Lunch breaks, I lesson plan/do homework, network, run errands
after work, I teach, do homework or get things done around the condo


Yesterday we stocked up on groceries and I thought I would show you all what I buy to make the week easier. Don't mind the flash and how messy it is! After we take some of the food to work it's back to normal.
Portobella mushroom caps, tofu, tuna for the guy, left over shrimp, sprouts, hummus and organic eggs up top.
Blackberries (buy two get one free) lemons, swiss chard, kale, broccolini, cucumbers. 
Green apples and clementines are to the right of the fridge. 
I warned you it's messy! I have a lot of bars ready to go. These seriously save me. If I'm running to class from work I usually grab a bar. I also have a container of healthy mixed nuts and dried fruit that I'll grab a handful or two of. Veggie broth, olive oil, beans, nutritional yeast, tomato sauce and all of my grains are another big staple.

Okay so where do I go from here?

Example Quick Meals:

1. Cook quinoa in veggie broth, once cooked add more broth in a big pot to make a soup. Add a green, seasonings, and maybe some beans for a hearty healthy and quick soup. 
**This lasts DAYS and can be had for lunches too!

2. Thaw out frozen plain spinach or saute fresh spinach add some parmesan cheese, crushed garlic, pepper and bake in the mushroom caps (I've never made this before but that was my idea when I spotted the mushrooms). 

3. Warm kale salad with hummus. I just saute the kale in olive oil and add a scoop or two of hummus to coat all the leaves. It's delicious!

4. Soba Noodles (buckwheat) with red sauce or evoo with spinach and garlic. 

5. Veggie stir fry. Add in left over tofu/beans/quinoa/brown rice and a sauce or dressing

A few tips: 
-Always make double! Most of these meals my fiance doesn't have so there is always enough for the next day. 
-If you have left over veggies and fruit- Juice them!


Those are just a few dinner ideas off the top of my head while I was shopping. We'll see what I end up cooking tonight! I think I might bake the broccolini...hmmm

New reader here :) I love to meal plan each week and find that keeping staples like grains/beans in the pantry always ensures a quick, healthy meal. Warm kale salad sounds delicious!

Hey Sarah! Thanks for checking out my little blog and leaving a comment :) I feel like a hypocrite...i went out to eat tonight after writing this meal planning post! At least the staples will be there tomorrow. I agree, keeping the pantry stocked up is a must!
