Happy Monday! It has been a very busy one over here. The best part of today, I have tomorrow off! My fiance has a meeting in the morning that just happens to fall on Valentine's Day so I took a personal day too!

This weekend I made a great Mexican inspired 1 pot meal I wanted to share.

What you'll need:
1 Cup of Quinoa
1 Can of Black Beans
2 Handfuls of Baby Spinach

Top each serving with a scoop of Guacamole or one 100 calorie pack of Wholly Guacamole
Cook the quinoa using the directions on the box/bag. While that is cooking, drain and wash the can of black beans. I open the can 75% of the way then drain the liquid that is in there. I fill the can slowly with water, shake it up a little and drain. I do this a few times to get all of the liquid out.
Once the quinoa is cooked, add the beans. You can add some extra water too if it looks a little dry. Wash and dry your spinach and add it to the pot so the spinach wilts a bit.



Season with salt and pepper, serve yourself a bowl and add your guacamole on top!

This one pot meal takes a maximum of 20 minutes. It is healthy, easy and you can get your Mexican fix. If you wanted to heat it up you could add red chili pepper flakes or powder. You'll have leftovers too!
